Hey Everyone, I have been moving like a mad woman this month. I started off this month moving into a new apartment and from there i have had project after project and all with no internet. So i am very sorry it has taken me so long to write but here is a recipe i started writing awhile ago. I made it for a couple game night and it seemed to be a hit. i love this dish because it is easy and you get all the good stuff...Vegies, protein, and grains. Yummm Have fun and keep reading. We get internet this friday and i can't wait to post some new photos of my apartment. My honey did a great job finding us a new place now just to get rid of the old one. Stuffed Zucchini
Stuffed Zucchini
6 zucchinis
½ Onion (chopped)
½ cup chopped tomatoes
3/4 cup cooked Brown rice
½ cup mozzarella, cheddar cheese or Parmesan
Fresh basil (optional)
If you are lucky enough to have large home grown zucchinis, chop the ends off to use as zucchini bowls. If you don’t have home grown zucchinis, store bought will do just fine. To use a store bought zucchini, take the zucchini and cut them in half long wise and then scoop out the middle placing in a bowl and put to the side. Next take the ground turkey, chopped onion, salt, pepper and garlic, and cook on med high heat until thoroughly cooked about 10 minutes. Once all the pink is gone, drain all the meat and place in the zucchini middles bowl. Next take this bowl and add the tomatoes, brown rice and ¼ of the cheese in to the ground turkey bowl. Once completely mixed, take and stuff the zucchini then place in oven at 350 degrees for 25 minutes. To make it look absolutely to die for, sprinkle the leftover cheese on top and broil for 5 more minutes.
