Double Mint Chocolate Surprise

Peppermint, peppermint, Oh Peppermint!! How you make my winter ooo so sweet!! Hee Hee...As soon as the cold weather hits, my boyfriends starts requesting his all time favorite Double Mint Chocolate Surprise cookies.  This cookie is my prize winning cookie at the Mena 2009 Christmas Cookie War!! Yes, i said war. My boyfriends family take compititions very seriously and it is a fight to the death of the last standing cookie. hee hee!!  This cookie is however not like most cookies, i think the peppermint really gives it a lighter taste then most cookies but the andes chocolate in each bit definately reminds you that you are still eating sugar sugar sugar!!!  I hope you fall in love with this christmas cookie almost as much as my bug has.  Merry Christmas and Happy Peppermint Time!

Double Mint Chocolate Surprise

            2 ½ cups of flour

½ tsp baking soda

¼ tsp salt

½ cup cocoa powder

1 cup brown sugar

¾ cup sugar

2 sticks of butter

3 large eggs

1 Tbsp vanilla

1 box Andes mints (chopped)

1 box Andes peppermint mint (if cannot find use peppermint bark)

Preheat oven to 300 degrees

Mix flour, baking soda, salt, and cocoa powder together. In a separate bowl mix the brown sugar, sugar and butter.  Once those are full mixed and look smooth add the 3 eggs. Once you can tell that the eggs have fully mixed in, slowly add the flour mixture ¼ at a time. Lastly, throw in the vanilla, Andies mints and Peppermint Bark. Bake for 14 min and volia.
