Bye Bye Bad Day Blues Peppermint Truffles



Yah yah yah... the name is long but it holds up to everything it states it can do. Sooo today was just one of those day where you wake up hating the world. All the little things go wrong. There is a hole in the bottom of your coffee cup.  You forgot to dry the clothes you needed to wear today. you step in a puddle. and the best one..there is only cold water left for your shower!! yes...yes that was my morning today. SO in a fit of frustration...i was ready to strike back and turn my day around. I hunted the web for the perfect sugary goodness to take away my bad day blues and it was then when my coworker introduced me to the glorious Oreo Truffle.  She said this truffle has been devoured by hungry hockey players and known to cure certain lady day blues. I was sold and spent the rest of the day trying to figure out a way to doctor up such a classic recipe and this is what i came up with. A little bit of peppermint, a little candy cane oreos and BAM The Bye Bye bad day blues Peppermint truffle is born. I know, i need to work on the name but i am trying to emphasize the bad day curing magic this truffle carries. It's not only the sugar that will put you into a chocolatie coma that has the power to erase all bad day memories but the process to make these yummy treats also add to its stree reducing qualities. Well, enough talk..you have to try this recipe but for now it's time to "Shut Up and Eat"



Peppermint Oreo Truffles


1 Box Peppermint Joe Joe's 
16oz rm temp cream cheese
1 bag semi sweet choco chips
2 tbsp milk or almond milk
2 tsp peppermint







Start by pouring the box of Peppermint Oreos into a zip lock bag, close it up and pull out your favorite destructive device.  Yes, I said destructive device.  I personally like a meat tenderizer but I have been told a rolling pin makes this next process not only stress relieving but absolutely just plan awesome. So ready…get set….and beat the Oreos to an oblivion.  You could use a food processor but that is so not as fun, stress relieving or as easy of a cleanup. Now once you have let out all your frustrations on your Oreos place the cream cheese in a bowl and blend until it is a smooth paste. Once you have the cream cheese to a smooth consistency then add the crumbed Oreos and mix again until you get a chocolate cream like mixture.  Take this mixture and make 1 inch truffles balls and place them on a silicone cookie sheet and place in the fridge or freezer for at least an hour.  When it get close to the hour you can start making the coating chocolate.  This is really easy….just dump your chocolate in a microwave safe bowl with the almond milk and peppermint and microwave for 20 seconds and stir. Then 20 more seconds and stir…keep doing this until you get a smooth chocolaty mixture. Then take your frozen balls coat them in chocolate then place in freezer to harden and TA-DA. Say good-bye to the bad day blues.
